When you are ready to brew again,
follow the same instructions from the start. 

For every one gallon batch of Kombucha,
use 1 cup of white sugar and 3-4 tbsp of caffeinated loose leaf tea
(6-8 tea bags).

Herbal teas are not recommended for Kombucha.
Sugar substitutes other than white sugar
are too complex for the SCOBY culture to break down. 
 
If your bottle is not made of strong glass,
kombucha can explode due to pressure and carbonation.
